Every day is like a mini Easter egg hunt at Enchanted Acres as my daughter and I are never quite sure where our hens will lay their eggs. Hens prefer to lay their eggs in private spaces that tend to be small and dark like the corners of buildings. Even though my dad made some neat nesting boxes, these inexperienced ladies tend to lay everywhere but inside the box!

From a consumer’s point of view, eggs are a natural choice for several reasons. Eggs are one of the few foods that naturally contain Vitamin D plus all of the essential amino acids. Recent studies confirm that eggs are a healthy source of lean protein. In addition, concerns have eased about cholesterol. In fact, the American Heart Association (AHA) no longer limits the number of egg yolks a person can eat.
