Spring has sprung! Just as many people switch out their wardrobes from one season to the next, I find myself trading casseroles and comfort foods with heavy sauces for lighter foods. I also incorporate more fruits and vegetables as they come into season.
That reminds me… April is national garden month. I’m eager to buy annuals for the flower bed in my front yard. I’m also looking forward to planting a few perennials that will help attract butterflies and hummingbirds to my backyard. This year I’m also hoping to a few new unusual fruits and vegetables like blue potatoes and purple carrots.
The recent warm weather has me eager to plan our garden, as well as get prepared for the arrival of our spring kids. Spring is a good time for baby goats and other animals to be born because the days become longer and temperatures rise. The warmer temperatures make it easier for babies to survive, especially baby animals that are born in the wild. As a result, many animals like deer have evolved to accommodate this natural cycle.
Spring is also a busy time for family activities. Our daughter is counting down to her next horse show. Our son is extra busy with track and golf meets plus tournament basketball. That’s why I take every opportunity I can to sit down as a family at meal time. Today I’m sharing one of our family’s favorite recipes for Berry French Toast. Hope you enjoy it as much as we do!
